I am happy if I manage to send out my greeting cards on time and get gifts for family. Recognizing friends and other important people in our lives becomes a near impossibility. Gooey Pumpkin Bars

A few years ago my brother-in-law decided to tie-the-knot. He and his soon-to-be wife did not have a lot of money so they decided to forgo the wedding cake. At the time I thought what...no wedding cake, how are they going to do that. Well, they asked for the help of family to make desserts for their special day and had a dessert bar instead. This is how I came upon the recipe for gooey pumpkin cheesecake bars, and I'm really glad I did and you will be too. This recipe is from one of my favorites, Paula Deen, so right there you know lots of butter and deliciousness. There are lots of variations on this recipe (so try your own), but this is what I found that works best for my family.

Muffins to Give Thanks For

These soft and rich muffins are called Thankful Muffins, because mothers everywhere are thankful that they are so simple to make! This recipe was given to me by a sweet mother of six (yes I said six) children. She brings these muffins as a contribution to many functions. These muffins are a favorite among parents and kids, alike. They taste as if they took an hour of slaving in the kitchen. If you don’t tell them, no one will ever know just how easy these are to make.

  • Mix one 14-oz can of Libby’s pumpkin with one package of boxed carrot cake mix and ½ 12-oz bag of mini semi-sweet chocolate chips.
  • It will be hard to mix at first. Keep stirring until well blended.
  • Spoon batter into lined muffin tins or greased mini muffin tins.
  • Bake for 25 minutes at 360 degrees.
  • Check to see if done with a wooden skewer.
  • Thankful muffins are best when eaten within two days. I don’t think you will have any trouble making that happen. They are delicious, low-fat and healthy too.

How many times have you shopped local toy stores at Christmas, only to find your kids have broken or thrown away half the gifts by February? Toys that look colorful and fun may have very little lasting value. Many foreign made toys are cheaply produced and break easily. Your kids are getting tired of the same old thing. Wouldn’t you like to find an alternative?

Some years ago, another mom told me to check out teacher supply stores for children’s gifts. I was wary, but agreed to give it a try. It was amazing to discover quality constructed items that were made to encourage the growth of little minds. The toys were fun and provided long lasting interest for my children. They make great birthday gifts, as well.
